EDIBLE FLOWERS...
FLORES COMESTIBLES...



This morning I went to the market and saw these amazing edible flowers and could not resist myself so I bought them..in fact..I ordered some more and diffrent kinds aswell....you should know by now how I love nature and it´s colours...well...if you combine that with my passion for cooking and eating...here you have it!
These amazing colored plates and let me tell you...delicious aswell!!!


Esta mañana me fuí al mercado y ví estas impresionantes flores comestibles y no me pude resistir así que las compré...no sólo eso sino que he pedido más y de distinto tipo...ya deberíais saber lo mucho que adoro la naturaleza y sus colores...pues...si combinas eso con mi pasión por la cocina y la comida...aquí lo tienes!
Estos impresionantes platos coloridos y déjame que te cuente...también están deliciosos!!!




There are about 250 edible flowers around the world...from which the ones we mostly use traditionally are artichoke flowers, zucchini flowers, Bróccoli, cauwliflower...but flowers in general have been used since early times from china with their flower teas to greece...
Now a days and thanks to the "fancy chefs" and their restaurants we see more of these original and beautiful colored flowers like Violets, Gardenias, Geraniums, Pansies, Begonias...and a long etc.

Hay alrededor de unas 250 tipos de flores comestibles en todo el mundo...de las cuales las más comunmente consumidas son las alcachofas, flores de calabacín, flores del Brécol, la coliflor...pero las flores en general han sido usadas desde los primeros tiempos desde china con sus tés a base de flores hasta Grecia...
Hoy en día y gracias a los "chefs elegantes" y sus restaurantes vemos cada vez más estas flores tan originales y de vivos colores preciosos como Violetas, Gardenias, Geranios, Pensamientos, Begonias...y un largo etc.




For my appetizer I made lovely pea pancakes (therefor the green color!) and added some yogurt and smoked salmon. As with salmon we need a bit of acidity I added these lovely flowers which the name in english I could not find, the latin name is "Oxalis pescaprae"  which have a great acidic flavor and goes perfect with the dish!
Of course I could not do it without ading some sprouts aswell and this is the result...lovely, colourful and delicious starter...mmm!!!

Para mi primer plato hice unos estupendos crepes de guisantes (de ahí el color verde!!) a los que añadí un poco de yogur y salmón ahumado. Como al salmón le pega un poco de ácido, añadí estas flores de vinagrera que tienen un estupendo sabor ácido que le va de maravilla al plato!
Y por supuesto no podía dejar de añadir mis apreciados brotes así que aquí lo tenéis un estupendo, colorido y delicioso entrante...mmm!!!


As second I made this lovely haddock filet which I prepared on a heated pan with some olive oil and at the end added some soja sauce and sesame oil to give it that punch...aside I made some butternut squash puré, some peas and of course...as I had lovely orange colours with my puré I thought why not add lovely "Nasturtium" flowers and again this is the lovely result...

Como segundo plato hice este estupendo filete de merluza que preparé en la sartén y al final de la cocción eché un poco de salsa de soja y aceite de sésamo para darle ese toque estupendo...aparte hice un puré de calabaza, unos guisantes y como no...como tenía estos preciosos tonos naranja pensé por qué no añadir estas Capuchinas de color naranja y de nuevo aquí tenéis el estupendo resultado...

No doubt that food must above all taste good but if it looks great it makes it even better...don´t you think?? :-)

HEALTHY NOODLE PLATE FOR DELICATE BELLY!
PLATO DE FIDEOS SANO PARA BARRIGA DELICADA!



This morning after two days of obligatory fasting I went to have my yearly intestinal check up, no fun but it must be done to make sure I am still doing good with my ulcerative colitis.
Everything went great! I am as healthy as a new born puppy! This is why I am so convinced that healthy living and eating is so important...health is a priority in my life and should be to all of us...
As I have been doing some fasting and colon cleansing  (I will not get into details) my digestive track is some what delicate now when it comes to ingesting foods...although it is totally fine to eat after such an intervention you still have to keep it calm for it to work normal again...
I came home from the hospital and I was soooo hungry...so I prepared myself this ealthy dish..some Udon noodles and fresh salmon that I left marinating in teriyaki sauce this morning before I left...it´s a simple dish...healthy...fresh....and most importantly for me ..easy to digest...:-))

Esta mañana tras dos días de ayuno obligatorio me fuí a hacerme mi control intestinal anual, no es divertido, está claro pero es algo que se de be hacer paracontrolar que todo sigue bien con mi colitis ulcerativa.
Todo fue de maravilla!Estoy más sana que un cachorro recién nacido! Por eso estoy tan convencida de que vivir y comer de forma saludable es tan importante...la salud es una prioridad en mi vida y debería serla para todos...
Como he estado haciendo ayudo y limpieza colónica (no entraré en detalles) mi sistema digestivoestá hoy algo delicado en cuanto a digerir comidas copiosas...a pesar de que se puede comer tras una intervención de este tipo es mejor mantener la calma para que pueda funcionar todo normalmente...
Cuando vine del hospital tenía taaanta hambre...que me preparé este plato saludable...unos fideos Udon y salmón fresco que dejé marinando en salsa teriyaki esta mañana antes de irme...es un plato muy simple...saludable..fresco y lo más importante para mí...de fácil digestión...:-))


Normally I would add some veggies to the dish like beans and carrots but as I mentioned before I must keep it simple and easy to digest , and as simple as it is...it´s delicious!!

Normalmente añadiría a este plato unas habas y zanahorias pero comomencioné con anterioridad debo mantenerlo hoy simple y fácil de digerir, y con lo simple que es...está delicioso!!

Recipe/receta:

-Udon noodles (any chinese store)/ fideos Udon (cualquier supermercado chino)
-Fresh Salmon (200gr)/ salmón fresco (200gr)
-Soya sauce /salsa de soja
-Teriyaki sauce/ salsa teriyaki
-Sesame oil/aceite de sésamo
-Extra virgin olive oil/aceite de oliva extra virgen
-Juice of one lime/ jugo de una lima
-Sesam seeds and sprouts /semillas y brotes de sésamo

Leave salmon marinating in teriyaki sauce for at least two hours, then cook the noodles in boling water until tender (about 5 min max).
In a heated pan add some olive oil , add salmon skin side down until you see it getting lighter in color,do not touch it otherwise it will break.Then turn around for 5 sec and remove from heat.
To serve, put cooked noodles into bowl, salmon on top and add soya sauce and some sesam oil together with the seeds and sprouts fro decoration  for last  touch add some lime juice to give that nice acid kick that goes so well with fish...and voilá! I ate mine with sticks! So much fun!

Dejar el salmón marinando en salsa teriyaki al menos dos horas, hierve agua y mete los fideos udon hasta que estén tiernos, tarda unos 5 minutos.
En una sartén caliente añade aceite de oliva y el salmón colocando la piel hacia abajo, no se debe tocar el pescado durante la cocción para que no se rompa, cuando ya veas que se está cocinanco, tomando un color rosa claro le das la vuelta y dejas 5 segundos más y lo retiras del fuergo.
Para servir, coloca los fideos en un bol, encima el salmón y echas la salsa de soja y el aceite de sésamo por encima junto con las semillas y brotes para el toque decorativo.En último lugar,echa un chorrito de jugo de lima para darle ese estupendo toque ácido que le va tan bien al pescado y listo! Yo me lo comí con palillos!Qué diversión!

STILL SUNNY...GAZPACHO TIME!
SIGUE SOLEADO...ES TIEMPO PARA GAZPACHO!



Here in Marbella we enjoy good weather all year round but what is not that normal is that we are having no rain whatsoever...people think that "global warming" is not real...I seriously think it is reality and we see it everyday...flowers are already blooming...it´s hot in the middle of February...to be honest it scares me...we really must take care of our planet if we want future generations to live in a healthy planet.
I have no kids, but I do have a niece  that I absolutly adore who´s 10 years... I wish for her a green planet with beautiful watery rivers where to play in and healthy air to breath...will she have that? I don´t know!
I recicle at home every tiny bit of garbage I have, it´s then when you realize how much plastic there is...in one day after doing groseries you can easily fill a bag full of plastic stuff used to pack food items...amazing!
Anyway,I don´t mean to give you a lecture about being "green" so I will get on with todays food delight!
A red beet gazpacho...mmm!

Aquí en Marbella gozamos de buen tiempo durante todo el año pero lo que no es normal es que no hayamos tenido nada de lluvia...la gente piensa que el "calentamiento global" no es real...seriamente pienso que si lo es y lo vemos a diario...las flores están ya floreciendo...hace calor a mitad de Febrero...para ser sincera esto me asusta...tenemos de verdad que cuidar nuestro planeta si queremos que futuras generaciones vivan en un planeta saludable.
Yo no tengo hijos, pero tengo una sobrina de 10 años a la adoro... deseo para ella un planeta verde con maravillosos ríos llenos de agua donde jugar y aire limpio del que respirar...lo tendrá? No lo sé!
En casa reciclo cada trocito enano de basura que tengo, sólo de esta manera uno es consciente de la cantidad de plástico que hay...en un día tras hacer la compra puedes fácilmente llenar una bolsa de plásticos usados para empaquetar la comida!
En fin, no os quiero dar lecciones sobre ser "verdes" así que continuaré hablando de las delicias comestibles de hoy! Un gazpacho de remolacha ...mmm!



I love gazpacho, not only is it fresh but it is so healthy. I had some leftover beets so I decided to make this gazpacho with a twist, basically you use the same ingredients as a normal gazpacho but without the peppers and less tomatos as you are adding the beets.

-2 Organic tomatoes (peeled)
-4 Red beets (organic and preboiled)
-1 cucumber
-1 onion
-1 garlic clove
-old bread (gluten free is what I used)
-Extra virgin organic olive oil
-Juice of two lemons (normally this would be vinegar!)

Mix all ingredients into a blender and serve with some fresh radish leaves to decorate!

Me encanta el gazpacho, no sólo es muy fresco sino que también sanísimo. Tenía unas remolachas que me sobraron así que decidía hacer este gazpacho con un toque diferente, es basicamente igual que el gazpacho tradicional sólo que con menos tomates ya que lo sustituyes por la remolacha y sin pimiento pues el sabor es muy fuerte.

-2 Tomates (pelados y orgánicos)
-4 Remolachas orgánicas ( previamente cocidas)
-1 Pepino
-1 cebolla
-1 diente de ajo
-Pan viejo (sin gluten es l que uso yo)
-Aceite de oliva extra virgen y ecológico
-El jugo de dos limones (el original lleva vinagre)

Mezclar todo en la batidora y servir con unas hojitas de rábano para decorar!



After this light and lovely cold soup I went for a walk on the beach which is about 5 minutes walking from home....mmm...live is beautiful isn´t it!?:-))

Tras esta sopa refrescante y ligera me fuí a caminar por la playa que queda a unos 5 minutos de casa...mmm...la vida es bella no crees!?:-))

HAPPY SAINT VALENTINE´S!
FELIZ SAN VALENTÍN!


This morning I woke up early as always and went into the kitchen to prepare my breakfast, again I was amazed to watch thrue the window this amazing sunrise....the sky was filled with beautiful yellow, orange and pink colours...it looked as if I were in a Monet picture...
With this vieuw and being Saint Valentine´s day I could not resist myself to make something pretty as inspiration was there for sure!

Esta mañana me desperté temprano como siempre y me fuí a la cocina a preprararme el desayuno y estaba otra vez emocionada de ver por la ventada un amanecer expectacular...el cielo estaba lleno de preciosos colores amarillo, naranja y rosa...parecía que estaba en un cuadro de Monet...
Con esta vista y siendo el día de San Valentín nome he podido resistir a crear algo bonito ya que la inspiración desde luego estaba presente!


The recipe is quite easy as it is just a flat bread, the trick is the lovely color, for which I have used red beet pure to create this great looking pink color on the bread!

Recipe:

-150 flour (I used spelt flour)
- 100ml soya milk (or any other kind of milk, you can also use yougurt!)
-50ml red beet pure
-A pinch of salt 

Mix all the ingredients toguether until you have a nice dough that does not stick, if it does, add more flour.
Create a ball and put it to chill in the fridge for 15min.
Make little balls and flattend to create a flat bread shape,then with a knife cut into heart shapes, heat a pan with some olive oil and add bread until it gets the right "flat bread" texture, be crefull not to burn it!
I ate mine with some cramberry jam, it´s lovely!




La receta es muy fácil pues es un simple pan de pita, el truco aquí es el bonito color que he creado usando en la masa de la pita puré de remolacha, para darle ese precioso color rosa al pan!

Receta:
-150g harina (yo he usado de espelta)
100ml Leche de soja (aunque puedes usar cualquier leche o incluso yogurt)
-50ml de puré de remolacha
-Una pizca de sal

Mezcla todos los ingredientes hasta crear una masa que no se pega, si se pega añade más harina.
Haz una bola y refrigera unos 15minutos.
Después crea bolitas y las vas aplastando hasta crear la forma del pan de pita, que luego cortas con un cuchillo en forma de corazón y en una sartén caliente con aceite lo calientas con cuidado de no quemarlo, cuando tenga la consistencia del pan de pita está listo!
Yo me comí el mío con mermelada de moras,buenisimo!

El amor está en el aire desde luego y no porque tenga pareja, pues no la tengo, lo más importante es quererse y respetarse a uno mismo, enorgullécete de quién eres...sé agradecido por lo que tienes y nunca mires hacia atrás.
Estoy agradecida porque tengo salud, porque tengo familia y amigos que quiero y que están sanos. estoy agradecida por cada mañana levantarme en un precioso lugar donde el Sol me saluda cada mañana estando en Febrero...SI, EL AMOR ESTÁ EN EL AIRE...OLEEEEEEEE!!!!

ASIAN INSPIRED...
INSPIRACIÓN ASIÁTICA...


And as last plate for now that I might bring to Madrid if things would go well is this Thai soup called Tom Kha Ghai made with coconut milk and lemon grass...normally chicken is used as the protein but I prefer using shrimp....

Y como último plato que puede que lleve a Madrid si las cosas van bien es esta sopa Tailandesa llamada Tom Kha Ghai hecha con leche de coco y hierba limonera...normalmente lleva pollo aunque yo prefiero hacerla con langostinos...




I am not sure if a soup is good enough but I must honestly say that I absolutly adore the taste of it and I have made it so many times that Im sure I prepare it very well....I still have two weeks to practice some other delicious plates...and yet..I don´t even know If I will get to Madrid..I just want to be prepared 100%!

Let´s hope I can tell you soon that I am going!!!!!

No estoy segura si una sopa es suficiente pero honestamente debo decir que me encanta el sabor que tiene y la he hecho tantas veces que tengo claro que me sale muy rica...todavía me quedan dos semanas para practicar platos deliciosos..y aún así...ni siquiera sé si iré a Madrid...pero quiero estar preparada al 100%!

FANCY DESERTS...
POSTRES ELEGANTES...


Again as you can see I am doing some practice when it comes down to plating for this possible future event...I am actually getting quite obsessed about it as it is really a dream of mine...
This case I made a raspberry coulis and some  seasonal fruits with crumble and vanilla custerd...aswell I made some more tropical lookind desert with pineapple, melon and blood orange slices on a bed of banana coulis and the same crumble.....

Una vez más como podéis ver estoy practicando en emplatado para el posible evento del futuro...estoy volviendome algo obsesionada con el tema la verdad..es un sueño que tengo...
En este caso hice un coulis de frambuesa y frutas frescas de temporada encima con un crumble y rema de vainilla encima...asímismo hice algo más tropical con trozos de piña, melón, naranja sanguina sobre un coulis de plátano...la misma crema de vainilla y el mismo crumble...

I love salmon and I love fresh salads..so why not combine these two and see what comes out of it?
With the same ingredients I practiced a bit of diffrent platings to see which one would be the prettiest...and here are the results....I will let YOUbe the judge!

Me encanta el salmón y las ensaladas frescas ..así que, por qué no combinar las dos y ver qué sale??
Con los mismos ingredientes he estado practicando en el emplatado para ver cual era el más bonito...y aquí están los resultados...te dejo a TI ser el juez!
