Chia seeds are an example of amazing mexican product..this seed is a great source of good fiber to maintain a healthy gut and keep blood sugar in low levels ,it also provides the body of minerals like Calcium and Iron but the most important part of chia seeds are that they are a great source of antioxidants like omega 3 !
The best thing to do for a great body absortion is to put a teaspoon of chia seeds in a glass with water and lemon juice, this taken on an empty stomach early in the morning is the best and healthiest way to start the day! Try it!

Another amazing food is called in Mexican "Jícama" or Mexican turnip, this is a root that tastes a bit sweet and is again a great source of fiber maintining blood sugar low, it has a lot of minerals like Calcium, Phosporus, Iron, Potasium , it is also a good antioxidant source as it has loads of vitamin C.
It is also used for stomach aches and helps the gut flora to grow creating a great environment for good digestion.

There are many ways to cook this root, I prefer it raw so that it maintains all the nutrients intact.

GOING INDIAN...
YENDO HINDÚ...

Starting on my new path and reading a bit more about legumes and their benefits for us and for our pets I remembered I had still some organic chickpeas I bought  a month ago at the herbal shop, so I decided to make me some delicious vegan meal...reading on one of my favorite blogs "My new roots" from Sarah B, she gave me this great idea to make theses samosas without using the conventional flour..good for gluten intolerants like myself...she used and now I did for this recipe, dried rice leaves instead of the conventional wheat dough and like she said, I am quite happy with the result!! Thank you Sarah B!!

Gracias Sarah B!!

RECIPE:

LIFE CHANGES...

LIFE CHANGES...

It´s summer and yess...I have been away for a while,I do apologize ;-)
Many things and changes happend that kept me away from my "blog duty" but I´m back and this time hoping to be more active on my blog as it makes me happy and relaxes me to tell my nutrtional stories and showing you my delicious meals!
To make a long story short, at the time I was confused and unsatisfied on how I was dealing with my profession and interests..as I love cooking ,love animals, love holistic medicine....but combining all these together was frustrating as I wanted to do them all but for that I needed more time in a day..
So after many hours of thinking, inner searching...I came with the solution.
In order for a person to be successful in his or her profession, one must focus on one maine thing and be the best at it...so, as I can´t be a vet and chef and a human nutritionist as it would take more than one person to do all this together I decided to stick with the holistic side of it all, as I want to continue helping people and animals with their health I decided to focus on nutrition, both human and animal, leaving the "clinical vet" a bit on one side to become the best human and animal health coach/nutritonist I can be,this way I am still envolved in animals health, human health and cooking (will continue doing my healthy food workshops).
The focus is improving health by eating organic and healthy food for humans and pets helping this way also the environment we live in being more eco-minded.

Beind summer, our body is asking for some fresh food to ingest as we already have high temperatures outside not needing to ingest warm foods...cold soups are a great option as not only they refresh our body but it gets hydrated aswell which in hot weather is necessary as we loose so  much from sweating.
Sweat secretions are full of minerals that need to me replaced, this is why drinking water is sometimes not enough, soups are a great way to drink all those lost minerals given by the vegetables you put into it.

WELCOME SPRING!!
BIENVENIDA LA PRIMAVERA!!

Ohh it´s so nice to hear the birds singing...the flowers blooming...although we had great weather the entire winter these past few weeks have been quite cold and we had loads of rain...which actually is great as we have had none what so ever during winter...
Now that I´m back from my horse adventure, I have some time to relax before I head again to take care of some other animals...my dear marine mammals...I will be going next week to Tarifa, to the beautiful beaches in the province of Cádiz, Tarifa is in fact the most southern point of Europe! As you know from last year, I go to this area to give a hand at the Foundation for protection of marine mammlas of the Strait of gibraltar, we offer information about these amazing creatures and teach how to protect them in order to see them live longer and for our children to still enjoy them...

As it is getting warmer and lately I am really into asian cooking I prepared myself these lovely "spring rolls"...well...we are in spring aren´t we?? :-)
I could have made some rice or just eat them like that but as I warmed them up in the pan with some olive oil I thought that a fresh salad would go very well with it!

Recipe:

For the spring rolls...
-3 rice spring rolls sheets
-3 fresh haddock fillets
-1 clove garlic, grated
-a bit of ginger, grated
-2 tbs soya sauce
-2 tbs sesame oil

Add all ingredientes together in a bowl, mix well. In a pan with warm water, add one by one the rice sheets until soft, spread on a wooden board and add part of the fish mix, make spring rolls shapes.
Warm some olive oil in a pan and add spring rolls until golden brown, oil must be hot otherwise the springrolls might break.
For the salad, any good organic salad leaves will do, for the dressing I used a simple lemon, olive oil, mustad and salt dressing, always remember to use 3 parts oli for one of acid (vinegar...lemon juice...) and a tbs mustard.Mix salad and salad dressing together and serve together with the springrolls...enjoy!!

Receta:

Disfruta!

ORGANIC EGGS...
HUEVOS ORGANICOS...

As in last post I spoke a bit about the importance of eating non suffering creatures...the same goes for eggs...if you think it cruedly eggs are the unfertilized ovules of chicken...when a chicken lives closed up all day without any sun and fed bad quality food this will show in her eggs and therefore in to you when you eat those eggs...
Organic eggs come from chickens that live freely not in confined spaces and eat grasses and all the little worms they find in the fields...meaning healthy food...healthy chicken and therefore healthy eggs...and then healthy consumer that means YOU!

And where do we find organic eggs??
Well luckily enough nowadays every supermarket sells them...but you have to know how to distinguish which are from those which aren´t...
Eggs have on their shells a code bar normally it starts from the country of origin, for example in Spain it will start with "ES-" and then a line of numbers follows. The important number is the first one which normally goes from 0 or 1 to 4 or 5 (depending on the country).
Organic eggs will have a 0 or a 1 as first numbers, example "ES 1".
Eggs that have numbers 2  to 4 or 5 are those that live more confined and in worse conditions...the bigger the number worse conditions.

AN INTERVIEW, A HORSE VISIT AND A RUSTIC SOUP!
UNA ENTREVISTA, UNA VISITA EQUINA Y UNA SOPA RÚSTICA!

Two days ago I got a call from the local radio-Tv station here in Marbella inviting me to come to their program to talk about the recent scandal about horse meat found in diffrent meat brands...so, this morning I arrived to the studio and got interviewd...I did like the fact that they called me as I find this issue interesting but very worring and I was glad to share this with the public, I also took the opportunity to mention the fact that I don´t eat meat and one of the main reasons is exactly this one....do we really know what we eat??the answer is, unfortunatly NOT...if they lie about what kind of meat they sell to the public...don´t you think there is a big chance they might lie about any "extra added chemicals"?? I am pretty sure we don´t even know have of the truth...I decided to cut it out of my life and to be honest I don´t miss it...and btw...needless to say about how much pain and suffering these animals go thru before going into the slauter house...animals when scared secrete "stress hormones" that stay in their blood/meat and that YOU ENDUP EATING...

After the interview I went to the ARROCHA EQUESTRIAN CENTER where I regularly go and check the horses and salute my friends aswell as to ride...it was a beautiful day and some classes were taking place...if you are here in the coast you should come for a ride..it´s a great place and classes are quite cheap!!

I checked a wound on the leg of one of the horses that two months ago looked very nasty and I was pleased to see it was curing very well!

After such a busy morning my stomach was asking for some food so I headed home to eat...after that some more studing was in order as the due date to start at the equine hospital is coming close! yuhuu!!!

For lunch I made this great sweet soup made out of organic carrots and blood orange...yess..it sounds nuts but it was actually quite delicious!

Recipe/receta:

-5 organic carrots/ 5 zanahorias ecológicas
-1 big oinion/ 1 cebolla grande
-1 garlic clove/ 1 diente de ajo
-1 blood organge/ 1 naranja sanguina
- Sea salt/ sal marina
-4 cups mineral water/ 4 vasos agua mineral

In a deep pan with olive oil, stirr in the chopped onion and garlic and leave for a few minutes until transparent then add the  cut carrots and stir for a few more minutes and at the end add the oranje..stir and add the water, cook until carrots are tender and blend everything until creammy texture.
Serve with some fresh sprouts and pieces of blood orange...enjoy!

SOME STUDING AND A RUSTIC PASTA DISH
UN POCO DE ESTUDIO Y UN PLATO DE PASTA RÚSTICO

Yesterday I had the sad news about the culinary event I told you about that I might be joining...well...I will not be joining it afterall...now I am preparing for my stay at the Equine Refference Hospital next week, Im doing some studing and preparing to go there and learn much more about these beautiful creatures...during my study breaks I continue with my cooking and my picture taking...
As I was eating too much animal protein (fish) lately my body was asking for some vegetarian food so I decided to make myself this lovely and rustic gluten free pasta dish...

Vitamin C was in order as here even thought sun shines it is quite chilly and I am starting to feel an itch in my throat so thought that some vit.C would be a good idea...tomatoes and red peppers have loads of this splendid vitamin!
For this easy recipe I used 1 large ripe tomato and 1/2 big red pepper, heat a pan with some olive oil, add half sliced onion and garlic and stir for a minute, then add the sliced red pepper and after a few minutes add the tomato...stir for a few minutes and in this pan add the fresh pasta after being boiled, the pasta I used is a fresh gluten free spinach pasta that I bought at the herbal shop...lovely taste!!

Plate with some oregano fresh leaves...

Sirve con unas hojitas frescas de orégano...
