STILL RAW...
AUN CRUDA...



Yesterday evening I finally saw a movie that I wanted to see for a while now, "Julie & Julia", with Meryl Streep where she acts as Julia child, the author of "Mastering the art of French cooking). I wanted to see it not only because it´s about cooking, also because it´s about a blogger...I wanted to know how she started blogging, maybe to get ideas on how she manages to have so many fans...I see many blogs here on the internet like Mynewroots, Earthsprout and 101 cookbooks that I love and wonder how can I have such a great audience as they do...Answering to myself was easy...I have not been blogging very constantly since I started the blog I must confess, reasons being is bad organization..I could say "lack of time" but I am pretty sure that many bloggers are busy aswell if not more and still manage to write on their blogs...so being very honest with myself is "lack of organizing"..I HATE TO ADMITE THIS but anyway...it´s time to put a stop on that and continue on the right path...another question that came from watching the movie was...how can it be that Julia uses so much butter in her french cooking and during the entire movie she did not gain any weight? I wish I could do that! I don´t mean eating butter, I don´t like it plus is very unhealthy...I mean, eating so much and staying slim...well...it´s a movie of course!
So, talking about healthy foods...here I show you some pictures of the raw week menu...I made nut cheese for the second time and I am so happy about the results! Never thought I would be able to eat cheese again being lactose intolerant!yeeeeyyy!

Ayer noche por fin vi una película que hacía tiempo quería ver, "Julie & Julia" con Meryl Streep de protagonista, hace el papel de Julia Child, la autora del libro " Mastering the art of french cooking".La quise ver no sólo porque va de cocina sino porque va de una blogger y tenía curiosidad en saber cómo empezó con su blog y cómo hace para tantos fans.Veo muchos bloggers aquí en internet como Mynewroots, Earthsprout y 101cookbooks que me encantan y me pregunto ¿cómo podría tener tanta audiencia como tienen ellos? La respuesta es fácil, no he sido muy constante a la hora de escribir en mi blog, la razón es mala organización, podría decir que es por falta de tiempo pero muchos bloggers tienen al igual que yo poco tiempo o menos y aún así consiguen mantener su blog al día, así que por mucho que no me guste admitirlo, es por mala organización.Así que es hora de mejorar esta parte y seguir por el camino correcto...otra pregunta que me hacía es cómo puede ser que Julia cocina durante toda la película con tanta mantequilla en su cocina francesa y no engorda ni un gramo!? ya me gustaría a mí poder hacer eso...no digo comer mantequilla que no me gusta y es poco saludable sino poder comer tanto sin engordar! Bueno..es una película claro!
Y hablando de comida saludable...aquí os pongo más fotos del menú que hice en mi crudisemana.Hice  queso de frutos secos por segunda vez y estoy muy contenta con el resultado! Nunca pensé que podría volver a comer queso de nuevo siendo intolerante  a la lactosa! yeeey!



A colorful salad with an amazing dressing
For the salad just use as many veggies you want, make sure they have a variety of colors to make sure you get all the phytonutrients you need...I used in this case yellow and orange bell peppers, carrots, spinach leaves and broccoli and sprinkled some sesame and flax seeds on top.
The dressing:

-1 tbs Dijon mustard
-1 tbs capers
-2 tbs sunflower seeds
-3 tbs olive oil
-a bunch of parsley 
- Sea salt to taste
Blend all together until paste, add more olive oil if needed .

Una ensalada llena de color y una vinagreta impresionante.
Para la ensalada usé todo tipo de vegetales, asegúrate de meter gran cantidad de colores para asegurarte tener todos los fitonutrientes necesarios, en este caso usé pimientos amarillos y naranjas, zanahorias, brocoli, espinacas y por encima lo rocié con semillas de sésamo y de lino.
La vinagreta:

-1 cuch de mostaza dijon
-1 cuch de alcaparras
-2 cuch de pipas de girasol
-3 cuh de aceite de oliva
- un manojo de perejil
- Sal marina al gusto
Mezcla todos los ingredientes en una licuadora, añade más aceite de oliva si gustas.



Guacamole:

-3 ripe avocados
- a bunch of cilantro, fresh
-1 fresh tomato
-1 clove garlic
- a bit of chopped onion
-Sea salt to taste
Mix all ingredients until smooth paste.

Guacamole:

-3 aguacates 
- un manojo de cilantro
-1 tomate
- un diente de ajo
- un poco de cebolla cortada fina
Sal marina cuanto quieras.
Mezcla todos los ingredientes hasta que quede una pasta suave.



Root salad:

-1 red beet grated
-2 grated carrots
-Few basil leaves
- sunflower seeds
-Juice of one lemon
- tbs Olive oil
-Sea salt to taste
Mix all ingredients

Ensalada de tubérculos
- 1 remolacha, rallada
-2 zanahorias ralladas
-Unas hojas de albahaca
- pipas de girasol
-Zumo de un limón
-Aceite de oliva
-Sal marina al gusto
Mezclar todos los ingredientes



Amazing nut cheese:

-1 cup raw almonds
-Juice of one lemon
-1 cup mineral water
-Dry oregano leaves
-1 clove garlic
-Sea salt to taste
-2 tbs olive oil
Blend all ingredients into blender until a paste, put into cheese cloth, let rest over bowl so that the liquid can fall into the bowl, put into fridge over night. At this point you can take the firm paste from the cloth and eat as a cream cheese or warm it up into an oven at low temperature for an hour in case you have no dehydrator like me! And this is the amazing result!

Impresionante queso de almendras

-1 taza de alemndras crudas
-Zumo de un limón
-1 taza de agua mineral
- Orégano seco
-3 cuch de aceite de oliva
-1 diente de ajo
-Sal marina al gusto
Mezcla todo en procesador hasta quedar una masa, métela en una tela para hacer queso y colócalo sobre un bol para que puedan caer los líquidos del queso, déjalo en refrigeador toda la noche. En este punto puedes ya sacar la masa sólida de la tela y comérte el queso como si fuera un queso de untar o sino lo puedes meter al horno durante una hora a temperatura muy baja si no tienes un deshidratador como es mi caso.Y este es el resultado impresionante!

RAWSOME WEEK...
CRUDISEMANA...


This week I have been bussy with my "raw week" where I made a nice menu for the group of clients who participated. As eating raw and juices for a week is not always easy, specially for those not used to eat this way it is always nice to have support from family or friends or in this case a group of people willing to go on this lovely and healthy week together...it is also a good way to start, if you are willing to go on a healthier way of eating to start a week like this accompanied with people that share your same interest, this way you will feel more motivated to keep on this track of healthy living and feeling great...

Esta semana he estado ocupada en mi "crudisemana" en la que preparé un estupendo menú para los clientes que quisieron participar. Como comer crudo y zumos no siempre es fácil, especialmente para aquellos que no están acostumbrados a comer de esta manera siempre es mejor hacerlo con el apoyo de la familia, a migos o como en este caso, con un grupo de personas que quieran hacer esta estupenda y sana semana juntos...a su vez es una buena manera de empezar , si quieres adentrarte en este nuevo mundo de comer sano, esta semana acompañado de personas que comparten el mismo interés, de esta forma te sentirás más motivado en mantenerte en este camino de vivir sano y sintiéndote estupendamente.



WHY RAW?
¿POR QUÉ CRUDO?

There are many reasons to eat raw...and the more I read and learn the more I now how this is true...uncooked food keeps it´s natural goodness, all the vitamins, minerals and phitonutrients are intact for you to digest and absorb meaning you will get all the nutrients that the food provides...buy cooking foods, most of the vitamins and minerals are broken down and you will not profit from them.
In thi other hand, the way you cook foods also can inffluence your health, as an example, roasting...bbq´s...turning foods, specially meats into a black color creates very high cancerigenous molecules, I will not get too scientiphic with my terms but believe me, by heating up your foods, specially animal foods, on high temperatures cause them to create chemical molecules not present when uncooked and very damaging to your body. A good example aswell are oils, when exposed to high temperatures they create the so well known FREE RADICALS..damaging your cells and being one of the biggest causes of disease of these times.
In the other hand, I am no extremist, I don´t eat all my foods raw as you probably know from my previous posts, I do cook some of my foods but I make sure that the way I cook them is safe and therefore not on high temperatures...I bake and try to keep it on 100 grades max...I steem my veggies...or boil them when it comes to my beans....just make sure that the biggest portion of your daily food is raw, about 60 % is good.

Hay muchas razones para comer crudo...y cuanto más leo y aprendo más me doy cuenta de lo cierto que es esto. El alimento no cocinado mantiene todos sus nutrientes intactos, es decir, las vitaminas, los minerales y los fitonutrientes listos para que los puedas digerir y absorber. El alimento cocinado, sobre todo a altas temperaturas pierden gran parte de sus vitaminas y minerales por lo que no podrás disfrutar de ellos.
Por otro lado, la forma en cómo cocinas los alimentos también influyen en la salud...un ejemplo es asar o la barbacoa, donde los alimentos, sobre todo de origen animal, adquieren un color negruzco que son productos de reacciones químicas y dan lugar a moléculas altamente cancerígenas. No me pondré demasiado científica con mis términos pero créeme que cocinar los alimentos sobre todo de origen animal da lugar a moléculas químicas muy perjudiciales para la salud. Otro buen ejemplo de esto son los aceites, que cuando sometidos a altas temperaturas crean los ya conocidos RADICALES LIBRES, con sus efectos destructores sobre las células y los provocadores de la gran lista de enfermedades de hoy en día.
Por otro lado, no soy extremista y como ya habréis visto de mis otros posts, cocino algunas de mis recetas pero me aseguro de que no estén expuestos a altas temperaturas como asar a bajas temperaturas (má. 100 grados) o los pongo al vapor o en el caso de las legumbres los hierbo en agua. Sólo asegúrate de que la mayor parte de los alimentos que comes al día sean crudos, como un 60% de ellos está bien.


So here is one of those deliecious raw recipes I made in this awsome week...."RAWMANESCO SOUP"...a tribute to a delicious sauce called Romanesco....enjoy!

Así que aquí tengo una de esas deliciosas recetas crudas que hice esta semana estupenda... "SOPA RAWMANESCO"...en honor a la deliciosa salsa romanesco...disfrútalo!

RECIPE
RECETA

- 4 red peppers            
-2 tomatoes
-1 garlic clove
-100 gr raw almonds
-3 tbs extra virgin olive oil
-juice of one lemon

Blend all ingredients in a blender and serve with some sesame seeds and basil leaves...mmm!

- 4 pimientos rojos
-2 tomates
- 1 diente de ajo
-100 gr de almendras crudas
- 3 cucharadas soperas de aceite de oliva extra virgen 
- zumo de un limóm

Mexcla todos los ingredientes en el mixer y sirve con semillas de sésamo y hojas de albahaca...mmm!

IT´S GLUTEN FREE!
NO LLEVA GLUTEN!



As I am doing the "mexican food" research I am finding some nice surprises as many of the vegetables that I encounter come originally from this lovely country...another example is courgettes or like italians would call them, Zucchini. Yes my friends...they come from Central América and México, it was Columbus who brought the seeds to the Mediterranean countries and were very popular in Italy , this is why many people think they originate from this country.
They come, as in our precious post, the "Chayote" from the Curcubitátea family like cucumbers, melons , squashes ...etc

Como estoy haciendo mi investigación culinaria de México me estoy encontrando con lindas sorpresas ya que muchos de los vegetales que encuentro son originariamente de este país...otro ejemplo son los calabacines o como le llaman los italianos, Zucchini.Si, queridos amigos...vienen de América Central y de México, luego fue Colón que trajo las semillas a los países del Mediterráneo y donde fueron muy consumidos en Italia, es por eso que mucha gente piensa que son de origen italiano.
Provienen de la familia de las curcubitáceas al igual que en el post anterior, el "Chayote" así como los pepinos, melones, calabazas...etc.





Nutritionally they are a very good source of vitamins and minerals, specially vit.C, great antioxidant and antiinflammatory , also vit.A and betacarotene, which are also great antioxidants helping the body against oxidative stress. The existance of Folate and vit. B helps to lower the homocysteine levels in the body. For those who don´t know what homocysteine is, it is an amino acid and breakdown product of protein metabolism, when in high concentrations in the body it increases the risk of  a heart attack and strokes, the reason being is the stimulation of plaque formation by damaging the arterial walls. Folate and vit. B, specially vit. B6 helps to decrease the homocysteine levels, the reason for this is that homocysteine also comes from another Amino acid, Methionine, which has as main function to provide methyl groups for cellular reactions, when Methionine donates a methyl group for a cellular reaction it becomes homocysteine, then homocysteine receives another methyl group from folate or vit.B to regenerate Methionine.
 Like many other green vegetables, they contain the phytonutrient Lutein which helps to prevent eye problems like cataract.
The amount of water is quite high and has low calories being this a great food for loosing weight diet.
The amount of minerals is also quite high specially in Magnesium, Potassium and Manganese, this last one helps in protein and carbohidrate metabolism ,participates in sex hormone production and catalyzes the synthesis of fatty acids.
All these properties make it an ideal vegetable to have on a daily basis either raw (best) or cooked...

Nutricionalemente son una buena fuente de vitaminas y minerales,sobre todo de vit.C y de vit. A (betacaroteno), potentes antioxidantes y antiinflamatorios, ayudando así al cuerpo contra el estrés oxidativo.
La existencia de folato y de vit. B ayudan a reducir los niveles de homocisteína en el cuerpo. Para aquellos que no sepan lo que es la homocisteína, es un aminoácido y producto del metabolismo de la proteína, niveles altos de este aminoácido aumenta el riesgo de ataques al corazón e infartos, la razón de esto es por la estimulación de coágulos por daño a la pared arterial. Folato y vit.B sobre la vit.B6 ayudan a disminuír los niveles de homocisteína en el cuerpo. La razón de esto es porque homocisteína también es un producto de otro aminoácido del cuerpo, la Metionina, su función principal es donar grupos metilo para crear reacciones celulares, cuando dona un grupo metilo la Metionina se convierte en homocisteína, que a su vez recibe nuevamente un grupo metilo del folato o de la vit. B6 para regenerar nuevamente Metionina.
Como muchas otras verduras de color verde, contiene el fitonutriente Luteína, que ayuda a prevenir problemas oculares como las cataratas.
La gran cantidad de agua y las pocas calorías lo hace muy bueno para las dietas de reducción de peso.
Los niveles de minerales también son considerables sobre todo de Magnesio, Potasio y Manganeso, este útlimo ayuda en el metabolismo de las proteínas y carbohidratos, ayuda en la formación de las hormonas sexuales y cataliza la síntesis de ácidos grasos.
Todas estas propiedades los hacen ideal para ser consumido a diario tanto crudo (aconsejable) como cocinado...



Yesterday, Sunday morning I came up with this new way of baking healthy tarts, one without gluten...I had a few potatoes and had lovely zucchinis and this is what I made...a lovely gluten free veggie tart!

Ayer, Domingo por la mañana, tuve la idea de hacer una tarta sana sin gluten, tenía unas cuantas patatas and preciosos calabacines y esto es lo que salió...una estupenda tarta svegetal sin gluten!

RECIPE
RECETA

-1 Potato in fine slices
-1 big white onion, slices
-2 cloves garlic, chopped
-1 big zucchini, in fine slices
-3 organic eggs

Put potato slices into baking tray as if it were a normal crust, preheat the oven about 10 minutes on 180 C, bake the potato crust for about 20 minutes or until light brown color.
In a pan with olive oil, add the onions, simmer for two minutes then add the garlic, cook for anothe two minutes and then add the zucchini slices, cook for about 3-4 minutes and take fom heat, add salt and pepper to taste. Add the veggie mix into the baking tray and add the eggs, beaten. Bake for about 15 minutes and ready!

-1 patata cortada en rodajas finas
-1 cebolla, en rodaja fina
-2 dientes de ajo, en trocitos
-1 calabacín grande, en rodajas finas
-3 huevos orgánicos

Colocar las rodajas de papata en una bandeja de horno en forma de como si fuera una masa de tarta, precalentar el horno unos 10 minutos a 180 grados. Meter la bandeja y hornear hasta que queden doraditas.
En una sartén con aceite de oliva, sofreír la cebolla unos minutos después añadir el ajo otros minutos y las rodajas de calabacín, sofreír todo unos minutos más, añadir sal y pimienta al gusto. Meter esta mezcla en la bandeja de horno con la patata y añadir los huevos previamente batidos. Hornear todo unos 20 minutos y listo!

"MEXICAN PEAR" TREAT...
GUSTO DE"PERA MEXICANA"...


For those who don´t know this amazing vegetable, let me introduce you to the "Chayote", called mexican pear as it does look like one. It´s from the family of the "curcubitáteas", meaning that they are from the same family as the cucumber, melons and watermelons althoug it is considered to be a vegetable and not a fruit. It´s green on the outside and white in the inside with little white seeds in them.
They come originally from central América and México and they were very much used by the Mayas and Aztecas, they were called in their native "Náhuatl" language, "Hitzayotli".

Para aquellos que no conozcáis este vegetal impresionante, dejádme presentaros al Chayote, también llamado "pera mexicana", así llamado porque realmente se parece a una pera. Perteneciente a la familia de las curcubitáceas, es decir, de la misma familia del pepino, el melón y la sandía, aunque no es una fruta sino un vegetal. Es verde por fuera y blanco por dentro con unas semillas que también son de color blanco.
Originariamente vienen de Centro américa y de México y fueron muy usados por los Mayas y Aztecas, en Náhuatl se las llamaba "Hitzayotli".



As for their nutritional properties, Chayotes are very good source of vit.C aswell as other vitamins like vit.A and B complex, thay also have good amounts of Calcium and potassium, whichmake them great for muscle and bone health. Their high amount of fiber and low amount of calories make them great veggies for loosing weight diets and people with diabetes as their glucemic index is quite low. Another good reason to have this great vegetable is for people with stomach problems and fluid retention. It is also used for it´s analgesic and antiinflamatory properties.
Do you need any more reasons to give this amazing vegetable a chance? ;-)

En cuanto a su valor nutricional, los Chayotes son una buena fuente de vit.C así como de otras vitaminas como la vit.A y las del complejo B, asímismo tienen gran cantidad de Calcio y Potasio, siendo muy buenas para mantener unos músculos y huesos sanos. Su gran cantidad de fribra y poca cantidad de calorías las hacen muy recomendables para dietas de pérdida de peso así como para las personas con diabetes por su bajo índice glucémico. Otra razón para consumir este vegetal es que ayuda a las personas con problemas de estómago y a eliminar líquidos. Tambíén es muy usado por sus propiedades analgésicas y antiinflamatorias.
Necesitas alguna razón más para darle una oportunidad a este estupendo vegetal? ;-)



In this case I used it to make an amazing winter soup and believe me it taste it delicious!! There the recipe...

En este caso hice una sopa invernal y creédme está muy rica!! Ahí va la receta...


RECIPE
RECETA

-3 Chayotes-cut into cubes         -3 Chayotes- cortados en cubos
-2 Potatoes-cut into cubes          -2 patatas-cortados en cubos
-1 Onion-chopped                      -1 cebolla- cortada fina
-2 cloves garlic-chopped             -2 dientes de ajo-cortados finos

Into a pan with olive on a medium heat add the onion and garlic, simmer for a 5 minutes, add potato and chayote, simmer for another few more minutes. Add two cups of water or more if you want a more liquid soup, I personally prefer the creamy texture. Cook until all ingredients are soft and blend until smooth cream. For decoration I used potato chips that I baked in the oven with a bit of olive oil and sea salt.

En una sartén con aceite de oliva, añade la cebolla y ajo, deja rehogar unos 5 minutos y después añade la patata y el chayote y rehoga unos minutos más. Añade dos tazas de agua o más si quieres una sopa más líquida, a mí personalmente me gusta más en crema. Cuece todo hasta que todos los ingredientes estén tiernos y bátelos en la batidora hasta tener una consistencia cremosa. Como decoración yo usé chips de papata que hice al horno con un poco de aceite de oliva y sal marina.
